Vegan Orange Choc Brownies.

This recipe is basically fool proof, it makes the most tasty, moist, chocolaty brownies! And vegan to boot!

Ingredients:
180g Self Raising Flour
120g Caster Sugar
3 heaped Tbsp. Coco Powder
300ml Soya Milk
4 Tbsp. Sunflower Oil
2 Tsp. Vanilla and Orange Essence
Bar of chocolate (70% or more coco solids/vegan!)
Pinch of Salt
Baking tin approx 10inch

(I tend to throw it in add a bit more here and there until I have my favoured consistency, just experiment! It's so easy)

  • Pre-heat the oven to 200c. Lightly grease and flour your baking tin and set aside.
  • Weigh out your dry ingredients, one at a time, then sieve them into a large mixing bowl, giving a quick stir with a spoon.
  • Add the oil, then the milk and stir (a spoon is fine, but using an electric mixer takes the work out and is more effective!)
  • Add your essences, keep mixing until everything is combined and you have a "pourable" consistency.
  • On a flat surface, pour around 2/3 of the mixture into the baking tin.
  • Break chunks of the chocolate bar off and scatter it over the mixture in the tin, use as much or little as you like!
  • When you're satisfied, pour the rest of the mixture over. It doesn't matter if there's chunks of chocolate poking through!
  • Whack it in the oven for around 25 minutes. When it's ready, it will spring back when gently pressed!
  • Leave to cool/settle for 20mins, the cut into sections. YUM.

Apple & Peach Crisp

This is a recipe I adapted from 'Hot Damn and Hell Yeah - Recipes For Hungry Banditos' by Ryan Splint. A vegan 'dirty south' cooking zine, it's not about healthy eating, it's about good, tasty, vegan food! It's very easy to make and there's no egg or milk called for, so I guess it's accidentally vegan :) It tastes amazing!

Vegan Apple & Peach Crisp

60g Brown Sugar
75g Rolled Oats
100g Flour
75g Vegan Margarine
1tsp Salt
1tsp Nutmeg
1tsp Cinnamon
Tin of Peaches
2 Large Bramley Apples
Ginger Syrup
Pre-heat oven to 190c.

Mix the dry ingredients together.

Rub in the maragrine until the mixture is pea-sized and all ingredients are combined. Put this to one side.

Core, peel and chop the apples into chunks and put them into a lightly greased baking tin or pie dish.

Pour the peaches - and the juice! - over the apples, spreading out evenly.

Drizzle 3 big table spoons of ginger syrup over the fruit. You can use a different syrup or juice of your choice instead, orange would work well!

Sprinkle the crisp topping over the fruit, spreading it all out evenly.

Place it in the pre-heated oven for 30-40 minutes, the juices will bubble and the whole thing will brown a little. If you gently press the topping it should feel firm, this means it's done.

Serve hot with Vegan cream or ice cream!

Bake-off!

I can't stop baking...Vegan of course!

I made Chocolate Orange Brownies, with a fudgey orange frosting. I've also been trying to perfect my Bakewell Slice, it's getting there!

I'm going to attempt muffins soon, using a different binder. I've just been using egg replacer and a little sunflower oil in place of eggs/lard etc. But I wannna play around with recipes, see what works best and gives nicest flavours. I have plenty of tasting volunteers ;)

I will probably put some recipes with photos up on here over the next couple of weeks... x
