Ingredients:
180g Self Raising Flour
120g Caster Sugar
3 heaped Tbsp. Coco Powder
300ml Soya Milk
4 Tbsp. Sunflower Oil
2 Tsp. Vanilla and Orange Essence
Bar of chocolate (70% or more coco solids/vegan!)
Pinch of Salt
Baking tin approx 10inch
(I tend to throw it in add a bit more here and there until I have my favoured consistency, just experiment! It's so easy)
- Pre-heat the oven to 200c. Lightly grease and flour your baking tin and set aside.
- Weigh out your dry ingredients, one at a time, then sieve them into a large mixing bowl, giving a quick stir with a spoon.
- Add the oil, then the milk and stir (a spoon is fine, but using an electric mixer takes the work out and is more effective!)
- Add your essences, keep mixing until everything is combined and you have a "pourable" consistency.
- On a flat surface, pour around 2/3 of the mixture into the baking tin.
- Break chunks of the chocolate bar off and scatter it over the mixture in the tin, use as much or little as you like!
- When you're satisfied, pour the rest of the mixture over. It doesn't matter if there's chunks of chocolate poking through!
- Whack it in the oven for around 25 minutes. When it's ready, it will spring back when gently pressed!
- Leave to cool/settle for 20mins, the cut into sections. YUM.
